The Salvatore Ferrandes company is a small family-run farm with organic cultivation of terraced land on the island of Pantelleria where the family, of Spanish origin, has been present for over six hundred years. The favorable climate, the generous fertility of the volcanic soil and the artisanal care in the transformations allow to obtain products of the highest quality such as capers, raisins and Passito di Pantelleria. We are in Pantelleria where the Zibibbo grapes are transformed into this wonderful Passito di Pantelleria 2009 by Salvatore Ferrandes. We are in the innermost part of Pantelleria above 300 meters above sea level. In the vineyard the agriculture is organic, without herbicides, without chemical and/or synthetic treatments and/or fertilizations, anti-parasitic treatments limited to low doses of copper and sulfur. The bunches are left in the sun until the end of September to dry (about 15 days). In the cellar, 20 days of maceration on the skins are done, then the must is drawn off and kept at room temperature, the fermentation develops naturally without inoculation of yeasts. The refinement takes place in stainless steel for about 6 months. On the nose classic ripe hints of raisins and sweet candied fruit or dried fruit with saline and marine as well as spicy hints
