It is produced from Carricante grapes , a vine that at high altitudes is able to produce wines of great cleanliness, freshness but also intense and full-bodied. Etna Bianco 'Lavico' Duca di Salaparuta is produced with only Carricante grapes grown on the slopes of Etna on the side of the Alcantara Valley, within the municipality of Castiglione di Sicilia. The soils, of volcanic origin, are located between 600 and 800 meters above sea level. When the grapes have reached the right level of ripeness, we proceed with manual harvesting into boxes, followed by destemming and pressing operations which precede a short pre-fermentation maceration . After pressing, the must is placed in stainless steel tanks for alcoholic fermentation at a controlled temperature, followed by 4 months of maturation on the fine lees in the same type of wine containers and at least 3 further months of refinement in the bottle before release on the market. market.
Duca di Salaparuta Etna Bianco 'Lavico' is bright straw yellow in colour. On the nose, hints of peach and pineapple emerge combined with iodine and white pepper notes . Good balance on the palate between softness, marked freshness and lasting savory trail.
