The Grillo “Shamaris” is produced with grapes from the vineyards grown in the districts of Monte Pietroso and Marchesa, which are located in the hilly area of ​​the Monreale countryside near Palermo. The estate is located at an altitude of 500 meters above sea level, with northern exposure. The vineyards are approximately 7 years old and are cultivated on sandy soil, with espalier systems with a density of 5000 plants per hectare and yields that do not exceed 75 quintals/ha. The harvest is manual and is usually carried out during the first ten days of September. After cold maceration for 5 hours at 14°C, the grapes are delicately pressed and cold decanted. The must is then sent to ferment in steel at a controlled temperature of 18-20 °C. The wine matures in steel tanks on the fine lees for 4 months and completes the refinement with a few months in the bottle.

The White “Shamaris” is a symbolic wine of Cusumano which summarizes the ability of a glass to perfectly express both the peculiarities of the terroir of origin and the characteristics of the Grillo grape variety, with its fresh, harmonious, intense and Mediterranean profile. A great white that is rightly carving out a place of honor in the Italian panorama. It has a straw yellow color. The olfactory profile opens up citrus notes, white fruit, soft tropical hints, elegant aromatic and floral nuances. On the palate it has a good structure, with crunchy and seductive fruit, well balanced by a lively mineral freshness. The finish is of good persistence, with a closing on savory notes.
